A Pittsburgh staple! This recipe doesn't have orzo in it, but feel free to add as much cooked orzo as you wish! Without the pasta, it is gluten-free - if you use gf breadcrumbs. Or use a gf tiny pasta to enjoy it the traditional way. Ingredients:
1/2 pound ground beef, extra lean |
3/4 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon fresh parsley, finely minced |
2 tablespoons parmesan cheese |
1 tablespoon dry bread crumbs - gf to make this gluten-free |
28 ounces chicken broth |
1 package frozen spinach, chopped |
Directions:
1. Combine ground beef, salt & pepper, parsley, cheese, bread crumbs & 3 T. water. Form into tiny balls. Brown in olive oil & drain. Bring broth to a boil, add meatballs & cook 10 minutes. Add spinach & cook about 5 minutes more. 2. If you wish, add cooked orzo or other tiny pasta to make it the traditional way. |
