The famous William Penn Hotel in Pittsburgh originated this salad in the big band era for a band leader who used to stay there. It is still on the menu today! Ingredients:
1 c. mayonnaise |
1 hard boiled egg, chopped |
1 t. cider vinegar |
1 t. olive oil |
salt and pepper to taste |
red-pepper relish (buy in the grocery store) |
1 head lettuce, torn into pieces |
1/2 c. grilled chicken, chopped |
3 large tomatoes, chopped |
shredded swiss cheese |
julienned baked ham |
Directions:
1. In a bowl, mix mayo with egg, vinegar and olive oil. Season with salt and pepper and add relish to taste. Mix. 2. Put lettuce into salad bowl, add chicken, tomatoes and salad dressing. Mix well. 3. Divide salad among 6 plates and garnice with cheese, ham, and more tomatoes. |
