We call these crunchy potato slices Pittsburg Potatoes because the only time as a child we ever had them was when we visited our aunt in Pittsburg. She made them for us as a bedtime snack each time we spent the weekend with her.
Ingredients:
2 potatoes (any type)
2 cups all-purpose flour
3 tablespoons baking powder
1 teaspoon seasoning salt
1/2 teaspoon black pepper
approx. 3/4 cup water
oil (for frying)
Directions:
1. wash potatoes and slice into approximately 1/4 inch slices, set aside.
2. put flour in bowl and add baking powder and seasonings to it, mix well.
3. slowly add water while mixing with a fork until you get a batter thick enough to cling to potato slices.
4. heat oil in skillet for frying.
5. dip potato slices in batter and fry them in single layer batches in hot oil for approximately 2 minutes on each side or until golden brown.
6. remove potatoe with slotted spoon to paper towel lined plate.
7. sprinkle with salt if desired and munch away.
