A healthy pizza made on a pita, with a cilantro pesto. Ingredients:
1/2 cup cilantro |
3 garlic cloves |
3 tablespoons olive oil |
4 tablespoons cheese, shredded |
5 pecans |
1 whole wheat pita bread |
1/2 tomato, sliced |
3 shitake mushrooms |
1/3 cup broccoli |
Directions:
1. Preheat the oven to 350 degrees. 2. To make the sauce: In a small food processor, combine cilantro, garlic, pecans, olive oil, and 3 tablespoons of cheese. Process until it makes a paste. 3. Spread the sauce onto the pita. 4. Place the tomato, mushrooms, broccoli, and remaining cheese onto the pita. 5. Bake for 5-10 minutes, or until the edges of the pita turn a golden color. |
