These make a nice addition to the holiday cookie tray with their green pistachio nut coloring. They require no frosting, so they’re easy to take along to a party, or pack up to mail to that someone special - and they’re quick to make. Read more . This is another recipe that came from my mom about 10 years ago. Ingredients:
11/4 cup butter, room temperature |
1 cup white sugar |
1 cup light brown sugar |
2 eggs |
2 teaspoons vanilla extract |
21/2 cups flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 cup quick-cooking oatmeal, pulsed in a food processor for just a couple seconds |
12 ounce package vanilla (white chocolate) chips |
1 cups shelled pistachio nuts, coarsely chopped |
1/2 cup shelled pistachio nuts, whole |
Directions:
1. In a large bowl, cream together butter and both sugars. 2. Add eggs and extract, mixing well. 3. Combine flour, baking powder, baking soda and oatmeal. 4. Gradually add dry ingredients to creamed mixture, mixing until well blended. 5. Stir in white chips and 1 cup of nuts. 6. Shape batter into 1” balls and place on lightly greased baking sheets. These will spread some, so leave enough room. 7. Flatten each ball with the bottom of a glass. 8. Press a whole nut on the top of each cookie. 9. Bake at 350 degrees for 10 to 12 minutes, until bottoms of cookies are just barely turning golden. 10. Remove cookies from baking sheets and cool on waxed paper |
