Pistachio Raspberry White Chocolate Cookies |

These tasty drop cookies are a jumble of nuts, white chocolate and raspberry jam. They freeze well and look very pretty. Any type of nut may be used and even dark choclate chips although the white chocolate is prettier This recipe is from my cookie files . Ingredients:
1/3 c butter |
1/3 c brown sugar, packed |
1/4 c raspberry jam |
1/3 c sugar |
1 egg |
1 ts vanilla |
1 1/2 c flour |
1 ts baking soda |
8 oz white chocolate chips - or chopped white chocolate |
1 c pistachio nuts, chopped or any other nuts |
Directions:
1. Cream butter and sugars. 2. Add egg and beat in. 3. Add vanilla and raspberry jam. 4. Mix well. 5. Mix together flour and baking soda. 6. Gradually add flour mixture to batter. 7. Stir in nuts and chips. 8. Drop by rounded teaspoonfuls onto lightly greased cookie sheets, 9. about 2 apart. 10. Bake at 350 degrees for 8-10 minutes. 11. Don't overbake. 12. Cool on racks. 13. Freezes well |
