Vanilla cupcakes stuffed with creamy pistachio pudding Ingredients:
1 box vanilla/ yello cake mix |
3 eggs |
1/4 cup oil |
1/4 cup water |
1 box pistachio pudding mix |
2 cups cold milk or half and half |
i container creme cheese icing |
green food coloring |
1 cup chopped pistachios |
Directions:
1. Mix together cake mix, water, eggs and oil 2. Add to cupcake tins (makes apporox 20 cupcakes) 3. Bake for 25 min at 350 degrees 4. Let cupcakes cool 5. Scoop a small hole out of the center of each cupcake 6. Mix pistachio pudding and milk together for 2 min 7. Pour pudding into pastry bad and cut tip of bag 8. Fill each cupcake with pudding 9. Add very teeny, tiny amount of green food coloring to cream cheese icing (creates a pastel green) MIx... 10. Add icing to pastry baga and pipe onto cupcakes 11. Chop up 1 cup pistachios 12. Sprinkle over cupcakes 13. Taaa Daaaa! All done! |
