From First Mag... in a special on Pistachios. Use stirred into pasta, or over fish, chicken, etc. Also good stirred into cream sauce, or as a sandwich spread. Ingredients:
4 ounces baby arugula |
1/2 cup grated parmesan cheese |
1/3 cup pistachios |
2 tablespoons garlic-flavored olive oil |
2 tablespoons water |
Directions:
1. In a food processor combine all ingredients and process until smooth, about 1 minute. |
