These are a bit time consuming, but well worth the effort. A fancy cookie that would be a great addition to anyones cookie recipe collection. Ingredients:
2c finely chopped pistachios |
1/4c honey |
1/4c butter |
3c all purpose flour |
1/2tsp salt |
11/2c cold butter |
1/2c ice water |
1c sifted icing sugar |
1/2tsp vanilla |
milk |
Directions:
1. Filling: Melt butter, stir in honey and sugar then pistachio's. Set aside 2. Pastry: Sift together flour and salt. Cut in butter until fine and crumbly. Add ice water and stir with a fork until just mixed. Form into a ball, cover with cling wrap. Chill about 1 hour. 3. Roll dough very thin, cut with a medium round fluted cookie cutter. Place a small amount of pistachio filling onto each pastry circle. Brush edges with water. Fold over and press together. 4. Bake at 375F until lightly golden, about 12 minutes. 5. Glaze: Mix icing sugar and enough milk to make a thin glaze, add vanilla. Drizzle over slightly warm pastries. |
