This recipe goes with Cantaloupe-Spinach Salad with Pistachio-Lime Vinaigrette Ingredients:
1/3 cup fresh lime juice |
1/3 cup honey |
1/4 cup chopped purple onion |
1 teaspoon dried crushed red pepper |
1/2 teaspoon salt |
1/4 cup chopped fresh cilantro |
3/4 cup vegetable oil |
1 cup pistachios |
Directions:
1. Process first 6 ingredients in blender until smooth. With blender running, add oil in a slow, steady stream. Turn blender off; add pistachios, and pulse until pistachios are finely chopped. Store in refrigerator. |
