Simple Pistachio Cake With Chocolate Fudge Frosting...Enjoy!!! Ingredients:

125 g soft butter |
1 cup sugar |
3 eggs |
1 1/2 tsp vanilla extract |
1 cup all-purpose flour |
1 tsp baking powder |
1/4 cup ground pistachios |
green food colour,few drops to get a light green colour |
milk(as required) |
sugar syrup |
1/4 cup icing sugar |
1/4 cup water |
combine both in a bowl and stir until sugar is dissolved. |
dark chocolate fudge frosting |
200 gm / 8 oz dark chocolate |
200 gm / 8 oz butter |
8 level tsp golden syrup |
green chocolate fudge frosting |
50 gm / 2 oz white chocolate |
50 gm / 2 oz butter |
2 level tsp golden syrup |
green food colour,few drops(to make light green frosting) |
extra |
1/2 cup pistachios,chopped/sliced |
pistachios,finely chopped (as required for sides of cake) |
Directions:
1. Preheat oven to 180 degrees C.Grease and line an 8 inch round pan. 2. In a bowl,cream together the butter and sugar. 3. Beat in the eggs, one at a time, then stir in the vanilla. 4. Combine flour and baking powder,add to the creamed mixture with ground pistachios and mix well. 5. Finally stir in the milk and colour until batter is smooth. 6. Pour batter into the prepared pan. 7. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. 8. Remove from oven and leave in the pan for 5 minutes,before turning out on a wire rack to cool. 9. When completely cooled,cut the cake into 3 layers. 10. DARK CHOCOLATE FUDGE FROSTING: 11. Combine dark chocolate and butter in a bowl.Melt in microwave for 1 - 1 1/2 minutes,stirring twice during this process. 12. Remove from MW and stir till smoothed.Leave to cool (in refrigerator) for 5 minutes and then add golden syrup. 13. Whisk till smoothed and mixture begins to thicken. 14. GREEN CHOCOLATE FUDGE FROSTING: 15. Combine white chocolate and butter in a bowl.Melt in microwave for 1 - 1 1/2 minutes,stirring twice during this process. 16. Remove from MW and stir till smoothed.Leave to cool (in refrigerator) for 5 minutes and then add golden syrup and green color. 17. Whisk till smoothed and mixture begins to thicken. 18. ASSEMBLING: 19. Place one layer of the cake on your serving platter,brush with sugar syrup(optional,if the sponge hasn't come out very soft, you can sprinkle sugar syrup). 20. Spread 1/3 of the dark chocolate frosting and sprinkle some chopped pistachios over it. 21. Place the second layer over this,and repeat with the syrup,1/3 of the chocolate frosting and chopped pistachios. 22. Place the last cake layer.Spread the remaining chocolate frosting over the top and sides of the cake. 23. Fill piping bag with green coloured frosting and decorate around top edge of the cake.Place some sliced pistachios on top to decorate. 24. Press the finely chopped pistachios on sides of the cake. 25. Chill well before serving. |
