Toast the nuts in these rich cupcakes for extra flovor,and add pistachio pudding mix for double dose of delicious. Ingredients:
1/2c shelled pistachios,toasted |
1 pkg(18.25oz) classic white cake mix |
2 eggs |
1pkg |
1 (3.4oz)instant pistachio pudding mix |
6 drops green liquid food coloring,optional |
1 cont.(15 oz) classic vanilla frosting1tsp almond extract |
chopped pistachios for garnish |
Directions:
1. Preheat oven to 350. Line 24 muffin cups with liners. In food processor,gring pistachios;reserve. 2. On med speed,beat cake mix,11/3 c water,eggs and pudding mix 2 mins. Stir in nuts and if desired,food coloring. Divide among liners. Bake 20-22 mins. Transfer to racks,cool. 3. Mix frosting and extract'spread over cupcakes. If desired,garnish with chopped nuts. |
