Pistachio Crusted Halibut (or White Fish) |

Yummy halibut with swiss chard. Ingredients:
1 cup nuts, shelled |
1 teaspoon dried oregano |
1 teaspoon dried thyme |
1/2 teaspoon garlic powder |
2 lbs halibut fillets |
1 salt |
1 pepper |
3 tablespoons honey |
1 1/2 tablespoons olive oil, divided |
4 ounces prosciutto, diced |
4 tablespoons pine nuts |
6 cups fresh chard leaves |
1/4 cup blue cheese, crumbled |
Directions:
1. In food processor, combine the pistachios, oregano, thyme, garlic powder, and process 2. Season fish with salt and pepper. Brush fish with honey mustard and press pistachio mixture to both sides of fish. 3. saute in hot skillet with half of the olive oil 4. in another skillet cook the prosciutto, pine nuts, and chard leaves. 5. Top with gorgonzola. 6. Serve with fish and enjoy! |
