Pistachio Crusted Cornish Game Hens |

A plump juicy game hen crusted with pistachios and parmesan cheese. I like to stuff mine with Stovetop sourdough bread stuffing as well. I've noticed that when stuffed, the birds stay much more moist. Ingredients:
1 cornish hen |
1/3 cup pistachios, shelled |
1/4 cup parmesan cheese, fresh grated |
1 tablespoon butter, melted |
salt and pepper |
Directions:
1. Preheat oven to 350°F. 2. In a food processor crush pistachios until crumb-like. 3. Mix grated parmesan cheese and pistachios in a small bowl. 4. In an 8 x 8 casserole dish baste the game hen with the melted butter. 5. Pat the pistachio mixture onto the bird, covering entirely. 6. Bake at 350°F for 1 hr 10 minutes. 7. Internal temperature of bird should be 175-180°F. |
