1 1/2 cups shelled pistachios |
1 cup sugar |
1/2 cup light corn syrup |
1/8 teaspoon salt |
1 tablespoon vegan hard margarine |
1 teaspoon vanilla extract |
Directions:
1. In microwave safe bowl, combine pistachios, sugar, corn syrup and salt. Stir until well combined. 2. Microwave on high until mixture is bubbly and nuts are starting to darken, 6-7 minutes. 3. Stir in margarine and vanilla and microwave until mixture is turning a pale golden color, 2-3 minutes. 4. Using oiled spatula, spread onto prepared baking sheet. Let cool completely. 5. Break into pieces and store in an airtight container. |
