Pistachio And Pineapple Ice Cream |

This is a very tasty frozen dessert that everyone will enjoy. Ingredients:
6 ounces miniature marshmallows |
1 can pineapple rings in natural juice |
4 ounces pistachio nuts skinned and coarsely chopped |
1 ounce vanilla sugar |
10 ounces double cream |
Directions:
1. To skin the nuts put into boiling water for about 1 minute then pull away the skins. 2. To make vanilla sugar place 2 pods of vanilla into jars of caster sugar. 3. Put marshmallows into top of double boiler. 4. Strain pineapple and measure out 1/4 pint juice then add to marshmallows. 5. Dissolve over double boiler. 6. Allow mixture to cool. 7. Finely chop pineapple rings then add to marshmallows with nuts and sugar. 8. Whip cream until in stands in soft peaks. 9. Fold into pineapple mixture then spoon into freezer safe dish and freezer for several hours. |
