This is our version of a classic French pastry very similar to a pizza in concept .I make this when we have friends around for drinks and cook it in our outdoor wood fired pizza oven Ingredients:
3-4 onions ,thickly sliced |
extra virgin olive oil |
1 quantity of best quality frozen puff pastry --to hard to make yourself and the frozen stuff is excellent . |
16 anchovies ,halved lengthways |
12 black kalamata olives ,stoned . |
fresh thyme leaves |
Directions:
1. Slowly cook the onion in 2 tbsp olive oil until very soft . 2. Preheat your oven to very hot ,about 220 Cent or 450 -475 F .. 3. Roll out the pastry to make a 30cm x 23cm rectangle (thats 12 ins x 8 ins ). 4. Leaving a 1cm rim (half inch ) ,prick the pastry all over with a fork and add a thick layer of the cooked onion 5. Arrange the anchovy strips in rows to form large diamond patterns 6. Put an olive in the centre of each diamond and drizzle over a little olive oil. 7. Sprinkle some fresh thyme leaves over all . 8. Bake in the centre of the oven for about 20 mins until the crust is brown and crisp . 9. Cut into squares while warm and pass around . 10. Sensational aromas from a wood fired oven .I make this while we prepare pizzas and snack on this until the pizzas are ready . |
