Ingredients:
4 slices bacon |
1/2 cup chopped onion |
1/4 cup chopped green pepper |
1 (14 1/2-ounce) can tomatoes, undrained and chopped |
1 1/2 pounds medium shrimp, peeled and deveined |
1 cup uncooked regular rice |
3/4 cup water |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/8 teaspoon hot sauce |
Directions:
1. Cook bacon in a large skillet until crisp; drain, reserving 2 tablespoons drippings in skillet. Crumble bacon; set aside. 2. Sauté onion and green pepper in bacon drippings until tender. Stir in tomatoes; cook over medium heat 2 minutes. Stir in remaining ingredients and reserved bacon. 3. Pour mixture into a greased 1 1/2-quart casserole. Cover and bake at 350° for 45 minutes or until rice is tender, stirring once during baking. Serve hot. |
