Pirate Stuffed Potatoes

This microwave dish allows you to use whatever leftovers you have....originally done with salmon or some other kind of seafood, you could easily adapt it with leftover steak, chicken or ?? Just scrounge your refrigerator (or someone else's) and use whatever you like. Read more . Take everythin', leave nothin .....thus the pirate name!!! Adapted from a recipe on Bed & Breakfast Inns Online and the Pelican Lodge in NC
Ingredients:
leftover fish or meat, about a pound or less works (i've used salmon)
6 good-sized baking potatoes, about 7 oz each
2 cups shredded cheddar or other cheese
1/2 cup milk
2 eggs
4 t margarine
chopped parsley, if desired
4 t minced onions (green, white or red)
1/4 tsp black pepper and salt, only if needed
Directions:
1. If using fish, flake it and set aside. If using chicken or other meat, flake, slice or chop and set aside
2. Pierce potato skins a few times with a fork and place in the microwave on a paper towel and cover with some plastic wrap
3. Cook until tender, about 18-22 minutes, depending on size of potatoes
4. When tender, cut a slice off the top of each potato and scoop out the inside, leaving 1/4 thick shell
5. Blend the potato pulp with 1/2 cup of the cheese, fish or meat and remaining ingredients
6. Spoon mixture into potato shells and place on microwave-safe plate
7. Microwave on high power for 4 minutes
8. Sprinkle with remaining cheese and microwave 45 seconds, or until cheese is melted
9. Garnish with chopped parsley
10. Serve and enjoy!!
