From Fast Chicken / The Hawthorn Series Ingredients:
6 chicken thigh fillets, cut into bite -sized pieces |
2 tablespoons olive oil |
2 garlic cloves, chopped |
3 tomatoes, diced |
1 teaspoon dried basil |
2 tablespoons capers |
2 tablespoons balsamic vinegar |
2 teaspoons brown sugar |
salt and pepper, to taste |
Directions:
1. Heat the oil and add the garlic. Cook for 30 seconds. 2. Add the chicken and cook for 5 minutes over high heat. 3. Add the tomatoes,basil,capers and balsamic vinegar. 4. Bring ot the boil, reduce the heat and simmer for 8 minutes,uncovered. 5. Stir in the brown sugar and season with salt and pepper. |
