These beans are deliciously spiced, easy to prepare, inexpensive, and great for large crowds and BBQs! Your house will smell great! Ingredients:
1 lb. package dried pinto beans, soaked, rinsed and drained |
approx 4 quarts water |
1/2 yellow onion, chopped |
3 garlic cloves, minced |
4 chicken bouillon cubes |
1 large palmful of chili powder (approx 2 tbs) |
1 large palmful of cumin (approx 1 1/2 tbs) |
1 tbs garlic powder |
1 bay leaf |
1 tbs dried parsley |
kosher salt and pepper to taste |
(1-2 tbs pickled or fresh jalapenos, chopped - optional) |
Directions:
1. Put beans in large pot, and add about 4 quarts of water over high heat. 2. Add bouillon cubes, onion and garlic and bring to a boil. 3. Reduce to low heat and add chili powder, cumin, garlic powder and bay leaf. (you can add jalapenos, if you like it spicy.) 4. Simmer over low heat (you want a very slight bubbling), with lid partially over pot, for 2 hours. 5. Add parsley, salt and pepper to taste (I use a couple of Tbs of salt and a couple of Tsps of pepper) 6. If it becomes too salty, add hot water to pot. 7. Great served with Mexican food, or over rice. Awesome with cornbread, as its own meal! 8. Enjoy! |
