From The Pioneer Woman Cooks! Ingredients:
4 cups dried pinto beans |
4 slices thick slab bacon, cut into 1 inch slices |
1 teaspoon salt |
2 teaspoons black pepper |
chili powder |
cayenne pepper |
garlic powder |
oregano |
sour cream |
fresh cilantro |
chopped red onion |
grated cheese |
pico de gallo |
Directions:
1. Rinse beans well and place in a large pot with the bacon; pour water over the top. 2. Use enough water to cover the beans by 1-2 inches. 3. Bring to a boil over med-high heat, reduce heat to low and cover; simmer 2-3 hours. 4. If liquid seems to evaporate to quickly, add more water during cooking process. 5. Beans are done when tender without much bite to them. 6. Add salt and pepper, stir, and taste. 7. Adjust seasonings as necessary, add in other seasonings as desired. 8. Serve with garnishes of choice. |
