Boild pinto beans with aromatics Ingredients:
1 lb dried pinto bean |
water |
2 garlic cloves, minced |
2 yellow onions, minced |
1/3 cup jalapeno, minced |
1 tablespoon sugar |
1 teaspoon cumin, ground |
1/4 teaspoon black pepper |
1 teaspoon salt |
3/4 cup bacon, chopped |
Directions:
1. Wash beans; put into a large bowl or cooking pot. Pour water over beans to cover them; let stand overnight, drain and discard water. 2. Put beans, garlic, onions, peppers, sugar, cumin and peppers in to a large stock pot. Pour water to cover mixture. Bring to a boil and simmer for 45 minutes. 3. Add salt and bacon; continue to simmer until beans are tender, about 45 minutes. |
