I know, it sounds weird, but try it you will be surprised with how moist and tasty these muffins are. Yummers. Enjoy Ingredients:
2 eggs |
1 cup mashed pinto beans |
1 cup milk |
2 cups flour |
1/4 cup vegetable oil |
2 teaspoons brown sugar |
1 teaspoon salt |
2 teaspoons baking powder |
Directions:
1. Mix dry ingredients. 2. Beat eggs then mix with milk, oil and mashed beans. 3. Combine all ingredients mixing enough to just moisten dry ingredients. 4. Fill muffin tins 1/2 full and bake at 400 for 25 minutes. 5. Serve hot. |
