Pinto Bean & Ground Beef Casserole |

A great way to get fiber into your eating plan. Ingredients:
6 ounces cooked ultra lean ground beef |
1/2 cup chopped onion |
1/2 cup chopped green bell pepper |
24 ounces cooked pinto beans, canned to save time |
15 ounces stewed tomatoes, canned |
6 ounces part-skim mozzarella cheese |
1 cup self-rising cornmeal, plus |
2 teaspoons self-rising cornmeal |
1 cup skim milk |
Directions:
1. Saute beef, onion, and pepper. 2. Place in a sprayed casserole dish. 3. Layer next 3 ingredients. 4. Mix milk and corn meal together. 5. Pour on top of other ingredients. 6. Bake at 400 degrees for 20 to 25 minutes until golden brown. |
