Tomato juice adds a wonderful color and flavor to this rice plaf recipe which is esp nice with meat and poultry. The raisins and spices also add a wonderful flavor Ingredients:
1 c fine noodles |
4 oz olive oil or margarine |
2 c long grain rice |
2 c water |
2 c tomato juice |
1 c vegetable or chicken stock |
1/2 ts allspice |
1/4 c minced parsley |
1 tb minced onion |
1/2 c golden raisins ( opt ) |
salt & pepper to taste. |
Directions:
1. Saute raw noodles until golden. You may wish to use 2. much less oil if desired. Add rice and saute with raw 3. noodles for 4 minutes, stirring constantly. Combine 4. and add remaining ingredients except parsley and 5. raisins and add to rice and noodles.Bring to a boil 6. and cover and simmer 20 minutes or tender and liquids 7. absorbed. Add parsley and raisins and fluff with a 8. fork. Season to taste. |
