The perfect frosting for the Peppermint Cake >Peppermint Cake. Use all those peppermint candies and candy canes that went uneaten! Ingredients:
2 egg whites |
1/4 tsp cream of tartar |
1/4 tsp lemon extract |
1/4 tsp peppermint extract |
salt |
1 pound powdered sugar |
1/3 c butter |
red food coloring |
1/2 c crushed peppermint candy |
Directions:
1. Combine egg whites, cream of tartar, lemon and peppermint extracts and salt. 2. Beat at high speed on a mixer until stiff. 3. Gradually add sugar 1 cup at a time. 4. Beat until smooth, scraping bowl often. 5. Add butter and a few drops of food coloring, beating until well blended. 6. Stir in peppermint candy. 7. Makes enough for 2 9 inch round Peppermint Cake >cakes. |
