Pink Peppermint Cupcakes

Relax with a cup of tea or coffee with one of these sweet cupcakes. The kids will love them with a cold glass of milk
Ingredients:
1 pkg (18 1/4 oz) white cake mix
1 1/3 cups water
3 egg whites
2 tblpns veg oil or melted butter
1/2 tsp peppermint extract
3 to 4 drops red food coloring
1 container (16 oz) prepared vanilla frosting
1/2 cup crushed peppermint candies ( about 16 candies)
Directions:
1. Pre-heat oven to 350 degrees
2. Line 30 standard (2 1/2 ) muffin pan cups with pink or white baking paper cups
3. Beat cake mix, water, egg whites, oil, peppermint extract & food coloring with mixer on low speed for about 30 seconds. Then beat at medium speed about 2 minutes
4. Spoon batter into prepared muffin cups, filling 3/4 full
5. Bake 20 to 22 minutes until a tooth pick inserted into the centers comes out clean
6. Cool in pans for 10 minutes & then remove cupcakes to wire racks to cool completely
7. Spread frosting over cooled cakes & sprinkle with crushed peppermint candies
