Pink And Pretty Strawberry-rhubarb Ice Cream |

This couldn't be easier and yet so delicious and pretty looking Ingredients:
1 1/2 cup rhubarb diced ( stems only no leaves ) |
1 1/2 cups strawberries chopped |
1/2 cup sugar |
2 tbs water |
1 quart good quality vanilla ice cream softened ( or prepare your own ) |
Directions:
1. Combine first 4 ingredients and cook over medium heat until tender. 2. Cool and chill well. 3. Stir fruit into softened ice cream until it becomes pink and fruit is well dispersed. 4. Replace ice cream in air tight container and freeze until firm. |
