this recipe is from the Lakeshore Landing in Kelleys Island, Ohio.. the pineapple and the raisins sounded like they go very nicely with the zucchini... Ingredients:
3 eggs |
1 cup oil |
2 cups sugar |
2 t vanilla |
2 cups shredded zucchini |
1 can (8 1/4) crushed pineapple, drained |
3 cups flour |
2 t baking soda |
1 t salt |
1/4 t baking powder |
1 1/2 t cinnamon |
3/4 t nutmeg |
1 cup currants or raisins |
1 cup chopped walnuts |
Directions:
1. Beat: eggs, oil, sugar, vanilla until thick 2. Stir in and blend well remaining ingredients. Pour into 2 greased 5x9 loaf pans. 3. Bake a 350 degrees for 1 hour. |
