I found this on the internet a couple of years ago when our apple tree was very abundant. I am not sure where it came from but it is good. The tree is loaded again this year so I expect to be making it again soon. Cook time is chill time. Ingredients:
1 (20 ounce) can pineapple tidbits |
6 cups chopped apples |
1 1/2 cups chopped celery |
1/2 cup raisins |
1/4 cup dry roasted sunflower seeds |
1/2 cup low-fat mayonnaise |
1/2 cup plain fat-free yogurt |
1/4 cup sugar |
Directions:
1. Drain pineapple, reserving 1/2 cup of the juice. 2. In a large bowl, combine the pineapple, apples, celery, raisins and sunflower seeds. 3. In a separate bowl, mix the mayonnaise, yogurt, sugar and pineapple juice. 4. Add to fruit mixture and toss to coat. 5. Refrigerate until ready to serve. |
