This is the most wonderful tasting pineapple upsidedown cake ever - I just love it - Ingredients:
1 tablespoon butter or 1 tablespoon margarine |
1/3 cup molasses |
1/4 cup sugar |
6 slices pineapple |
6 maraschino cherries |
1/3 cup shortening |
1/3 cup sugar |
1/2 cup molasses |
1 1/2 cups sifted flour |
3/4 teaspoon salt |
3/4 teaspoon baking powder |
1/2 teaspoon ginger |
1/2 teaspoon cinnamon |
1/4 teaspoon clove |
1/2 teaspoon baking soda |
1 egg |
1/2 cup sour milk |
Directions:
1. TOPPING:. 2. Place butter in a 9-inch square pan or casserole dish, melt, Add molasses and sugar. Over this arrange pineapple and cherries. 3. CAKE PART:. 4. Cream shortening, sugar and baking soda. Add molasses. Stir in 1/4 of the sifted dry ingredients. Beat in egg. Add remaining flour and sour milk alternately. Beat until smooth. Pour over pineapple and spread to corners. Bake at 350F for 1 hour. Cool 10 minutes, turn upside down. |
