From the American Diabetes Association. canned or fresh pineapple chunks, canned Mandarin oranges packed in juice, crystallized ginger, plain non-fat yogurt, vanilla, sugar cvt Ingredients:
1 1/2 cups pineapple chunks, canned or fresh |
1 1/2 cups mandarin oranges, packed in their own juice, drained |
2 tbsp minced crystallized ginger |
3 cups plain nonfat yogurt |
2 tsp vanilla |
2 tsp sugar |
6 pinches minced crystallized ginger |
Directions:
1. Combine the pineapple, oranges and ginger. Mix well. 2. Combine the yogurt, vanilla and sugar. 3. In parfait glasses, layer the fruit and yogurt, ending with the yogurt. 4. Sprinkle each with a pinch of ginger and serve. |
