A delicious dessert..... i love pineapple ...enjoy............. courtesy amish cooking.......... Ingredients:
1- large can crushed pineapple |
3/4 - cup sugar |
3 - cups flour |
5- tablespoons minute tapicoa |
2- tablespoons butter |
2- sticks of butter/ or margarine |
2- egg yolks . beaten ...................reserve egg whites.......... |
1- teaspoon salt |
1- teaspoon vanilla |
1- tablespoon sugar |
1/2- cup milk |
Directions:
1. Bring pineapple, sugar and tapicoca to a boil........ 2. cook until thickened........ 3. remove from heat.........add 2 tablespoons butter 4. cool completely......... 5. mix flour and 2 sticks butter / margarine as for a pie................ 6. beat egg yolks, salt, vanilla, sugar and milk 7. pour into flour........mix.......... 8. divide dough in half...........grease pan 9. roll out 10 1/2 x 15 ( jelly roll) pan ( cookie sheet) 10. spread dough in pan 11. and then add filling on top 12. roll out remaining dough and put over filling 13. brush with egg white........ 14. sprinkle with 2 tablespoons sugar and ground nuts over the top 15. bake at 350 degrees f. for 40 minutes........... 16. cool and cut into squares 17. serves 10-14 |
