A friend of mine from work brought these into work one day. He said they were his grandmother's recipe - Jenny Sharpe 1957. These are very delicious. Enjoy! Ingredients:
1 cup flour |
1 teaspoon baking powder |
1/2 cup butter |
1 egg, well beaten |
1 teaspoon milk |
1 cup white sugar |
2 cups sweetened coconut |
1 tablespoon butter |
1 egg, beaten |
1 (8 ounce) can crushed pineapple, drained |
Directions:
1. Base:. 2. Mix ingredients as for pastry – pat into 9 x9 x 2 inch pan. 3. Topping:. 4. Mix topping ingredients together. 5. Pour over pastry. 6. Bake 350 40 – 45 minute. |
