Chicken Breast seasoned with exotic spices and pineapple juice Ingredients:
2 breast skin-on chicken breast |
4 dash black pepper |
1/2 tsp cayenne pepper |
1 tsp cumin, ground |
1/2 tsp hot mustard powder |
1/2 tsp ground ginger |
1 tsp ground coriander |
1/2 tsp rubbed basil |
1/2 tsp ground nutmeg |
2 tbsp white wine vinegar |
3 slice pineapple |
Directions:
1. Mix all dry ingredients together in a bowl 2. Coat chicken breasts with dry rub, turning to coat evenly 3. In a blender, pulse white wine vinegar with pineapple until mixture is a smooth liquid 4. Pour wet mixture onto breasts and turn to coat evenly 5. Refrigerate chicken for at least 1 day to allow good marination 6. Grill chicken, 2 minutes per side, or until grill marks form 7. Place chicken on baking dish, and coat with marinade mixture 8. Bake chicken at 350 degrees F for 10-15 minutes, or until chicken is cooked through completely, turning once at the 7-8 minute mark |
