Family recipe made every year for Thanksgiving and Christmas. Goes great as an ice cream or whipped cream alternative with pie! Ingredients:
2 cups canned crushed pineapple |
1 cup sugar |
1 tablespoon plain gelatin |
1/4 cup cold water |
1/2 teaspoon vanilla extract |
1/8 teaspoon salt |
2 cups whipping cream |
Directions:
1. Soak gelatin in water. 2. Heat pineapple. 3. Stir in sugar, salt. 4. When boiling, stir in soaked gelatin. Remove from heat and stir until dissolved. Chill until almost set. 5. Whip cream. Add vanilla. 6. Fold into pineapple mixture. Place pudding into wet mold. Chill 4 hours or longer. |
