No frosting, no fuss. You can have a really delicious dessert in about 45 minutes. This is a tried and true Southern Living recipe. Ingredients:
1 (8 ounce) can crushed pineapple, undrained |
1 1/2 cups all-purpose flour |
1 tablespoon baking powder |
1/4 teaspoon salt |
3/4 cup sugar |
1/3 cup milk |
1/3 cup butter, melted |
2 large eggs, lightly beaten |
1/2 teaspoon vanilla extract |
1/3 cup firmly packed brown sugar |
Directions:
1. Preheat oven to 350. 2. Drain pineapple, reserving 1/3 cup juice. 3. Set aside. 4. Combine flour and next 3 ingredients; make a well in the center. 5. Combine the reserved juice, milk and next 3 ingredients. 6. Add wet to dry ingredients, stirring just until moistened. 7. Spoon into a greased 9' square pan. 8. Top with pineapple and then sprinkle with brown sugar. 9. Bake for 25- 30 minutes. 10. Cool in pan on wire rack for 10 minutes. |
