Pineapple slice Ingredients:
1 cup desiccated coconut |
1/2 cup caster sugar |
1 1/2 cups plain flour |
185g unsalted butter, melted |
1 tsp vanilla extract |
300ml thickened cream |
pineapple topping |
440g can crushed pineapple |
1 cup water |
3/4 cup caster sugar |
1/4 cup custard powder |
Directions:
1. Preheat oven 180c. 2. Grease a 19cm x 30cm pan. Line base and sides with baking paper, extending 2cm above sides of pan. This will make pulling out the slice easier. 3. Combine coconut, sugar and flour in a bowl. Add butter and vanilla. Mix to combine. Press over base of prepared pan. 4. Cook in oven for 15 - 20 minutes, until golden brown. Cool completely in pan. 5. Meanwhile make the topping. In a saucepan over a medium heat, combine the pineapple topping ingredients. Keep stirring until mixture boils and thickens. 6. Pour evenly over the cooled base and spread evenly. Refrigerate until set. 7. Beat cream until firm peaks form and spread over set topping. 8. To serve, lift the pineapple slice from the pan and cut into squares. |
