This is a recipe I obtained from a friend who served this with crackers at a bridal shower last month. I have made it since then and stuffed it into pitas. Makes a great lunch. Enjoy Ingredients:
6 cups water |
2 pounds fresh medium shrimp |
1 cup celery chopped fine |
20 ounce can unsweetened pineapple chunks drained |
1/3 cup raisins |
1/2 cup mayonnaise |
2 teaspoons curry powder |
4 pita bread pockets |
4 leave lettuce |
Directions:
1. Bring water to a boil and add shrimp then cook 5 minutes and drain well. 2. Rinse with cold water then peel. 3. Combine shrimp and remaining ingredients then refrigerate at least 1 hour before serving. 4. Serve in a pita bread lined with lettuce. |
