Fresh and lively, this salsa works well on grilled fish. Ingredients:
1 cup finely diced pineapple |
1/4 cup red bell pepper, finely diced |
1 serrano chili pepper, minced |
1/4 cup finely diced red onion |
2 tablespoons fresh lemon juice or 2 tablespoons fresh lime juice |
2 tablespoons chopped fresh cilantro |
1/4 teaspoon kosher salt |
Directions:
1. In a small bowl mix together the pineapple, pepper, chili, red onion, juice, cilantro and salt. 2. Serve now or refrigerate up to two hours. |
