A very unique recipe that uses Pineapple Sage Leaves & Flowers for bits of red & green color and a lovely pineapple/lemon flavor. Lovely and healthy! Ingredients:
1 cup butter at room temperature |
1 cup sugar |
4 tablespoons drained chopped pineapple |
1/4 cup honey |
2 tablespoons finely chopped pineapple sage leaves |
3 tablespoons coarsely chopped pineaple sage flowers |
5 eggs |
1 teaspoon grated lemon peel |
2 cups flour |
1 teaspoon baking powder |
Directions:
1. Preheat oven to 325 degrees. 2. Cream butter & sugar until fluffy. 3. Add honey. 4. Add eggs one at a time. 5. Beat in sage leaves, flowers & lemon peel. 6. Stir dry ingredients together & add to butter mixture. 7. Fold together gently, until just blended. 8. Pour into four miniature loaf pans. 9. Bake at 325 degrees for approximately 45 minutes or until golden brown. 10. Cool for 10 minutes on rack, then turn out of pans and finish cooling. 11. Slice & enjoy! 12. ***Note: This recipe can be made without the flowers and also make sure leaves & flowers are organic or have not been sprayed with insecticides. |
