I had some pineapple left over and came up with this alternative to onion rings! Ingredients:
1 egg |
1/4 cup pineapple juice |
1/2 cup all-purpose flour |
1 dash nutmeg (optional) |
1 (8 ounce) can pineapple rings, drained save juice |
oil (for frying) |
Directions:
1. Whisk together egg and pineapple juice. 2. Lightly stir in flour and nutmeg to make a thick batter. 3. Dip pineapple rings into batter. 4. Fry in hot oil until lightly browned about 350 degrees Fahrenheit. |
