Great in sandwiches, with ham etc. Ingredients:
450 g (approx. one) pineapple |
1 cup brown sugar |
2 tbsp butter |
2 tbsp cider vinegar |
1 tsp curry powder |
1/2 tsp salt |
1/4 tsp ginger, ground |
Directions:
1. Peel and core pineapple, cut into very small pieces. 2. Barely cover with water and bring to boil - simmer for 10min. 3. Drain water and add other ingredients. 4. Return to boil, stirring constantly, then simmer, stirring often for 10min. 5. Spoon into hot clean jars and seal. |
