An easy and delightful cookie. You won't be able to eat just one. Betty Crocker's Best Of Baking. Ingredients:
1 1/2 cups sugar |
1/2 cup margarine or butter, softened |
1/2 cup sour cream or plain yogurt |
1 egg |
1 can (8 1/4 oz.) crushed pineapples, undrained |
3 1/2 cups all-purpose flour |
1/2 cup chopped almonds |
1 tsp. baking soda |
1 tsp. vanilla |
1/2 salt |
vanilla frosting |
2 cups powdered sugar |
2 to 3 tbs. milk |
1 tsp. vanilla |
Directions:
1. Heat oven to 375 degrees. 2. Mix sugar, margarine, sour cream, egg and pineapple in large bowl. 3. Stir in remaining ingredients except Vanilla Frosting. 4. Drop dough by teaspoonfuls about 2-inches apart onto ungreased cookie sheet. 5. Bake dough 8 to 10 minutes or until almost no indentation remains when touched in center. 6. Immediately remove from cookie sheet. 7. Cool completely. 8. Prepare Vanilla Frosting: 9. Mix ingredients until smooth and of spreading consistency. 10. Spread on cookies. |
