This recipe is FABULOUS!!! My mom turned me onto this side dish as a child, we only got to have it around Thanksgiving or Christmas, I don't know why since it is pineapple, but it gave yet another reason to look forward to the holidays! Read more !! If you stumble upon this recipe TRY IT!! TRY IT!! TRY IT!! If you like pineapple and sweets, you surely won't be disappointed!!! **WARNING: not pretty to look at while making, but don't despair, it will knock your socks off!!**
Ingredients:
1 stick margarine, softened
1-3/4 cups sugar
3 eggs
1/2 cup milk
1/2 tsp. vanilla
1 can crushed pineapple, unsweetened and undrained (20oz.)
3 cups cubed white bread, crusts removed (8-9 slices)
**firm textured (day or two old) bread works best for this recipe.
Directions:
1. Preheat oven to 325 degrees F.
2. Lightly butter a 9 square(1-1/2 qt.) glass baking dish.
3. Cream margarine and sugar with mixer.
4. Beat in eggs, one at a time.
5. Stir in undrained pineapple, milk and vanilla.
6. Fold in bread; pour into baking dish.
7. Bake 1 hour.
8. Serve warm or at room temperature.
9. **Make sure glass dish is at room temperature before baking. May be prepared a few hours ahead and baked when ready to serve.**
