slow cook pork & veggies, spice it up a little with vinegar, soy sauce, hoisin sauce, pepper to taste Ingredients:
3 lb pork |
1 lb pineapple |
1 bell pepper |
1 onion |
14 oz tomatoes (i82700) |
2 garlic cloves, chopped |
1 tablespoon old bay seasoning |
1 tablespoon oregano |
1 tablespoon cumin, ground |
1/2 tablespoon kosher salt (or less to taste) |
1/2 tablespoon red pepper flakes (to taste) |
2 tablespoons cider vinegar |
1/4 cup brown sugar |
Directions:
1. cut up pork into 1-inch dice, and place in a large bowl. 2. mix spices & herbs in a small cup and sprinkle mixture over pork. Toss to coat evenly. 3. Chop all veggies & pineapple bite-size pieces. 4. place peppers, onions, garlic, & pineapple in crock pot. Layer chopped spiced pork over veggies. Add tomatoes from can. 5. Stir together cider vinegar & brown sugar and pour over all. 6. cook on low setting for 6-7 hours 7. chill thoroughly 8. skim solid fat off top 9. reheat by serving size in microwave 10. freeze leftovers in serving-size portions for later enjoyment. |
