Here's a quick and healthy dessert or snack with tropical flavours. This recipe comes from the Vegetarian Passport Cookbook by Linda Woolven. Ingredients:
1 cup dried pineapple |
1/2 cup shredded coconut |
1/4 cup sesame seeds |
2 tablespoons pineapple juice, use only as much as needed to make consistency right for forming into balls |
Directions:
1. Add the first 3 ingredients to a food processor and blend until somewhat smooth. 2. Add as much juice as is required to make the consistency right for forming into balls. 3. Form into balls and allow to harden. |
