Pineapple pie with shortbread pie crust makes an excellent dessert. Ingredients:
398 ml crushed pineapple |
2 tablespoons cornstarch |
1/4 teaspoon salt |
1/4 cup sugar |
1 tablespoon butter |
1 tablespoon lemon juice |

1 cup flour |
1/2 cup butter |
3 teaspoons icing sugar |
Directions:
1. Mix flour, butter and icing sugar and press into a 9 inch pie plate. Bake 20 minutes at 350°F. 2. Cook crushed pineapple, corn starch, salt and sugar until thick. Add butter and lemon juice. When cool pour into the cooked pie crust. |
