Ingredients:
3/4 cup sugar |
3 tbsp quick cooking tapioca |
dash salt |
4 cups fresh pineapple chunks |
1 tsp grated lemon peel |
1 tbsp lemon juice |
1 9 inch pie shell with top crust |
butter |
Directions:
1. Mix sugar, tapioca and salt. Separately; mix pineapple, lemon peel and lemon juice. Combine two mixtures. Let stand 2. 15 minutes. Turn mixture into 9 inch pie shell. Dot with butter. Place top crust with slits. Bake at 425 degrees approximately 45 minutes. |
